July 28, 1866 -- Helen Beatrix Potter born in South Kensington, Middlesex, England

December 16, 1901 -- Beatrix Potter published The Tale of Peter Rabbit. Having been turned down by a half-dozen publishers, Potter financed this first edition herself -- 250 copies with her own black and white illustrations, given away or sold at a half-penny each because, as she put it, "little rabbits cannot afford to spend 6 shillings."

December 22, 1943 -- Beatrix Potter died at Sawrey, Lancashire, England.

Mrs. Rabbit makes Baked Eggs for supper for Flopsy, Mopsy, Cottontail, and Peter. Here's a recipe that might be used for your "little bunnies."

INGREDIENTS

6 eggs
1/2 cup milk
1/4 cup grated Swiss, Gruyere, sharp cheddar, or chevre
salt and pepper to taste

1. Preheat oven to 400F.

2. Butter 8 muffin cups. Whisk eggs, milk, salt and pepper together and divide evenly among the 8 buttered muffin cups.

3. Sprinkle eggs with grated cheese. Bake for 15 minutes, until eggs are golden and puffed.

4. Slide a knife around each egg to remove from tin. Serve on toast, or on English muffin or bagel halves.
